Grilled Lamb Chops

Ingredients:

  • rib lamb chops - as many as people for appetizer, more if main course
  • garlic paste - 2tsp (or equal amount of fresh chopped)
  • salt - 2tsp
  • black pepper - 1tsp
  • cinnamon - 1/4 tsp
  • allspice - 1/4 tsp
  • lemon juice - 2tsp
  • preserves - 3tsp (i used peach-mango-orange from costco)
  • olive oil - 2tsp
  • (note that all measurements are adjustable to your taste.

Directions:

  1. Cut lamb chops into individual pieces.
  2. Place meat end down into gallon Ziplock bag.
  3. Make marinade by mixing together all other ingredients. Note that the marinade will taste a bit too salty, but that upon cooking that will not be an issue.
  4. Pour marinade into bag, seal, and refrigerate for at least a few hours.
  5. Heat gas grill on high. This would be a medium charcoal heat.
  6. Place chops on grill for about 5 minutes. Turn and grill another 5 minutes.
  7. Note that flare ups are not a problem nor is overcooking as lamb is very oily and will stay wonderful pretty much in spite of your cooking efforts.
  8. Place in radiating pattern on serving platter.
  9. Enjoy the comments of your guests.
