Grilled Acorn Squash With Tofu

Ingredients:

Directions:

  1. Pierce each squash in several places with a sharp knife. Grill over medium hot coals, turning frequently, until squash is tender, 35-40 minutes. Let stand until cool enough to handle.
  2. Cut squash into halves; scoop out and discard seeds.
  3. Scoop out flesh and mash in a large bowl; add tofu, egg, egg whites, brown sugar, margarine and spices, mixing until smooth. Season to taste with salt and pepper.
  4. Spoon mixture into greased 1 quart baking dish. Bake, uncovered, at 350 until mixture is set and toothpick inserted near the center comes out clean, about 30 minutes. Let stand 5 minutes before serving.
