Green Tomato Pie

Ingredients:

  • 4 cups green tomatoes , cut into 1/8 inch slices
  • 1 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp clove
  • 1/2 tsp salt
  • 3 tbsp flour
  • 4 tbsp cornstarch
  • 2 tbsp butter
  • 2 tbsp lemon juice
  • 1 tsp vanilla

Directions:

  1. Por boiling water over tomatoes to cover 3 minutes
  2. Drain
  3. Pour over lemon juice and vanilla
  4. Mix
  5. Mix spices salt flour corn starch
  6. Mix into tomatoes toss like apples
  7. Pour into 1 pie crust
  8. Dot with butter
  9. Top with other pie crust
  10. Vent
  11. Bake 60 minutes at 400 degrees
  12. Cool.
