Directions:

  1. Blanch the green beans in boiling salted water for 6 to 7 minutes, or until just tender.
  2. Drain and transfer to a bowl of ice water to set the color.
  3. Drain and pat dry.
  4. Transfer to a plastic storage bag& chill.
  5. (Beans may be prepared 1 day in advance.) In a large skillet set over moderate heat, cook the shallots in the olive oil, stirring occasionally, until lightly golden.
  6. Add the green beans and salt and pepper and cook until heated through.
  7. Add the dill, lemon peel, and lemon juice.
  8. Toss to coat, and transfer to a serving dish.
