Greek -flaming- Cheese - Saganaki

Ingredients:

  • 1- lb soft kasseri or kefalotiri cheese
  • 3- tablepoon melted butter
  • thin slices of crusty bread
  • 2- tbsp brandy

Directions:

  1. Cut cheese into 3 wedges or slices 1/4 inch thick
  2. Place on a broiler pan
  3. Brush with melted butter
  4. Broil 4-6 inches from heat until cheese is bubbly and light brown
  5. Remove from heat
  6. Pour brandy over the cheese and ignite immediatley
  7. Sprinkle with lemon juice and serve with bread
  8. Serves 8......
