Great Smokey Mountain Spoon Bread

Ingredients:

  • 1 cup cornmeal , stone ground if possible
  • 2 cups cold water
  • 2 tsp salt
  • 1 cup milk
  • 2 tbsp butter or bacon drippings

Directions:

  1. Mix cornmeal, water, and salt together in a saucepan.
  2. Boil 5 minutes, stirring. Add milk, eggs, and butter; mix well.
  3. Pour batter into well-greased hot pan or baking dish.
  4. Bake 50 minutes at 375°.
  5. Serve from dish.
