  1. Preheat oven to 350. Spray a 9x13 glass baking dish with cooking spray.
  2. Combine first 5 ingredients in a large bowl. Fold in potatoes and spread into baking dish. Top with shredded monterey jack.
  3. Bake for 40-50 minutes.
