Glazed Cranberry Mini Cakes

Ingredients:

  • 1/3 cup packed light brown sugar
  • 1 egg
  • 1 1/4 tsp vanilla extract
  • 3/4 tsp. baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp. milk
  • 2/3 cup hersheys vanilla milk chips
  • 1 cup hersheys vanilla milk chips

Directions:

  1. Heat oven to 350
  2. Lightly grease or paper line small muffin cups
  3. In small mixer bowl beat butter, granulated sugar, brown sugar, egg and vanilla till light and fluffy
  4. Stir together flour, baking pwoder, baking soda, and salt:
  5. Gradually mix into butter mixture.
  6. Add milk
  7. Stir until blended.
  8. Stir in cranberries, walnuts and vanilla milk chips
  9. Fill cups about 7/8 full with batter
  10. Bake 18-20 min. or until wooden pick inserted comes out clean.
  11. Cool 5 min. remove to wire rack to cool completely
  12. Vanilla Glaze
  13. In small microwave-safe bowl place vanilla milk chips, sprinks oil over chips.
  14. Microwave on high 30 seconds, stir vigorously.
  15. If necessary microwave an additional 30 seconds until chips are melted when stirred.
  16. Drizzle over top of mini cakes refrigerate 10 min to set glaze
