Ingredients:

  • 1 large acorn squash
  • 1/3 cup orange juice
  • 1/2 cup brown sugar , firmly packed
  • 1/4 cup butter
  • 2 tsp lemons , rind of, grated
  • 1/8 tsp salt
  • orange slice (optional)
  • parsley (optional)

Directions:

  1. Cut squash into 3/4-inch-thick slices; remove seeds and membrane. Arrange squash in lightly greased shallow baking dish.
  2. Pour orange juice over squash.
  3. Cover and bake at 350 degrees for 30 minutes.
  4. Combine next 5 ingredients in a saucepan.
  5. Bring to a boil; reduce heat, and simmer 5 minutes.
  6. Pour sugar mixture over squash.
  7. Bake, uncovered, an additional 15 to 20 minutes or until squash is tender, basting occasionally.
  8. Garnish with orange slices and parsley, if desired.
