Ingredients:

  • 2/3 cup finely chopped parsley (, flat leaf is best if you can find it)
  • 1/2 cup finely diced green onion
  • 3/4 cup uncooked bulgur (, soaked in warm water until aldente)
  • 1/4 cup finely chopped fresh mint
  • 2 lemons , juice of
  • 3 -4 tbsp olive oil

Directions:

  1. Combine all ingredients and let stand at room temp.
  2. For an hour or so to allow flavors to blend.
  3. Serve with pitas.
