German-Style Red Cabbage (Rotkohl)

Ingredients:

  • 3 tbsp bacon grease
  • 2 medium apples, diced
  • 1 cup water
  • 4 tbsp vinegar
  • 4 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp ground cloves

Directions:

  1. Remove coarse outer leaves from cabbage. Cut head into four pieces, remove the hard core and shred finely. Melt bacon grease in a large pot, add cabbage and apple, stirring until well-mixed. Add water, vinegar and spices. Cook until tender, about 1 hour. Stir frequently. Serve with a favorite main dish such as sauerbraten or roasted pork shanks.
