Garlicky Tortellini Spinach And Tomato Soup

Ingredients:

Directions:

  1. Heat oil/butter in a large saucepan over medium high heat. add garlic and saute for 2 minutes.
  2. Add broth and bring to a boil. add tortellini and cook 3 minutes.
  3. Add tomatoes and their liquid (if using canned); reduce heat and simmer until pasta is tender (about 5 minutes)
  4. Stir in spinach and basil; cook until just wilted (about 2 minutes)
  5. Spoon into bowls and if desired, top with sprinkled parmesan cheese.
