Garlic Mashed Potatoes with Arugula

Ingredients:

Directions:

  1. Place potatoes and garlic in saucepan; add cold water to cover.
  2. Bring to boil; cook 2o minutes or until tender.
  3. Reserve 1/4 cup of the cooking water.
  4. Drain potatoes and garlic; return to saucepan.
  5. Add reserved cooking water, the milk, salt and pepper.
  6. Mash with potato masher or beat with electric mixer until smooth.
  7. Stir in arugula and olive oil.
  8. Serve immediately.
  9. Makes 6 (1 cup) servings.
