  1. Mix the first four ingredients - chill dressing in refrigerator for at least an hour to blend flavors. Thin with more lemon juice and/or milk if desired.
  2. Prepare lettuce and fruits. (If you want to cut the fruit and have it ready prior to serving the salad, mix it with a little lemon juice to prevent oxidation.)
  3. Plate the lettuce & fruit and spoon dressing over top. Garnish with croutons, if desired.
  4. Other fruit possibilities could include chopped apple, dried cranberries, mandarin oranges... the combinations are almost endless! Using lime juice instead of lemon in the dressing would make a nice taste variation.
