Frozen Peanut Toaster Slices

Ingredients:

  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 1/2 tsp salt (optional)
  • 3/4 cup milk

Directions:

  1. Grease or line a 9x5x3 inch (1lb) loaf tin and set it aside.
  2. In a bowl, sift flour, sugar, baking powder, and salt (if using).
  3. Add the peanut butter and rub in with your fingers as if making pastry, until it resembles crumbs.
  4. Add the milk and eggs; stir just until the mixture is well combined but do not overbeat.
  5. Turn the mixture into the loaf tin.
  6. Bake at 180c/350f for 40-45 minutes.
  7. Check to see if cooked by inserting a knife in the centre - it should come out clean.
  8. Remove from tin and put on a rack to cool.
  9. When cool slice into 3/4 inch slices and either toast, or, if freezing stack the slices with a small sheet of greaseproof paper between each slice.
