Fried Peach Pies

Ingredients:

  • oil , as needed, for frying
  • 2 eggs
  • 1 tbsp sugar
  • 1 tsp salt
  • filling:...........
  • dried peaches or fresh peaches, chopped and confectioners' sugar , for dusting, if desired

Directions:

  1. Mix eggs, baking powder, sugar and salt.
  2. Add oil and milk and stir well.
  3. Mix in flour, one cup at a time. Knead well until smooth.
  4. Divide the dough into ten pieces.
  5. Roll out each piece into a circle of dough. Place two to three heaping tablespoons of dried or fresh peaches in center of each round.
  6. Fold over and crimp edges with a fork.
  7. Deep fry until golden brown in pre-heated pan of oil.
  8. Dust with powdered sugar, if desired.
