Fried Okra And Green Tomatoes

Ingredients:

  • 2 lbs fresh home-grown okra ( pods should be smaller than 5 inches)
  • 1/2 cup cornmeal mix
  • 1/2 cup to 1 cup vegetable oil
  • 1/4 tsp. salt

Directions:

  1. Wash and DRY okra pods ( it is very important to get the pods dry otherwise when you slice the okra it will get slimy on you)
  2. Cut the stem part from the pod and discard. Slice the pod in 1/8 inch slices all the way to the end...unless the end it tough
  3. In a large bowl mix the diced tomato with the okra
  4. Add the cornmeal, salt and pepper stir unitl the vegetables are coated
  5. Heat 1/2 cup of oil in a large non -stick skillet. When the oil is heated very carefully add the okra mixture. Do not add the cornmeal from the bottom of the bowl! Turn the heat to medium
  6. Fry gently for about 25 minutes.
  7. You will need to stir the okra around every 5-7 minutes so that it doesn't burn. Add more oil as needed.
  8. The okra and tomatoes are ready when they are golden brown and crispy
  9. Line a serving bowl with paper towels and put the okra and tomatoes in the bowl
  10. Serve right away
