Fresh Blackberry Pie With French Vanilla Ice Cream

Ingredients:

  • 1/2 cup flour , plus 1 tbsp
  • 1/2 cup sugar
  • 1-1/2 tbsp fresh lemon juice (brings out flavor in blackberries)
  • 1/4 cup sugar to be sprinkled on top pastry

Directions:

  1. Place one pie crust in a 9 inch pie plate or pan
  2. In a bowl, mix *3-1/2* cups blackberries with 1/2 cup sugar and flour, saving the other *1/2 cup* blackberries, they will be sprinkled over filling before topping with second pie crust
  3. Now, spoon the blackberry, sugar, flour mixture into pie crust
  4. Sprinkle 1/2 cup remaining blackberries over this
  5. Sprinkle lemon juice over all
  6. Top with other pie crust, (I like to pierce the letter B in the middle, leaving a few holes for steam to escape, but this is optional)
  7. Flute the edges of the pie crust (makes it beautiful!)
  8. Sprinkle 1/4 cup sugar over top crust
  9. Place a pie crust edge guard on pie, OR tear strips of aluminum foil, and enclose only outer edge of crust. This prevents too much browning on the edges
  10. Bake at 350 degrees until nicely browned
  11. CAN ALSO MAKE A COBBLER FROM THIS SAME RECIPE
  12. Serve with a scoop of French Vanilla Ice cream
