James Beard's Blackberry Pie

Ingredients:

  • 4 cups blackberries
  • 1 1/2 cups sugar
  • 4 tbsp flour
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 2 tbsp butter

Directions:

  1. To wash berries, put in colander and dip up and down in bowl of water; drain well.
  2. Combine with sugar, flour, salt and lemon juice.
  3. Turn into pastry lined pie pan.
  4. Dot with butter.
  5. Trim pastry edge and moisten it.
  6. Cover with top pastry, trim edge, crimp top and bottom edges together and cut vents for steam.
  7. Bake at 450ºF for 15 minutes.
  8. Reduce heat to 350ºF and bake 25 to 30 minutes longer.
  9. Cool on a rack.
