French Peasant Bread

Ingredients:

  • 2 1/4 tsp yeast (rapid rise)
  • 2 cups warm water
  • 1 tbsp sugar
  • 2 tsp salt
  • 4 cups flour

Directions:

  1. Dissolve yeast, sugar and salt in water.
  2. Add flour and stir with a wooden spoon until blended. Do not knead - it will be lumpy.
  3. Cover and let rise until doubled, about 1 hours
  4. Oil a cookie sheet with olive oil.
  5. Oil hands and remove dough from bowl and divide into 2 rounds and place on cookie sheet.
  6. Sprinkle dough with cornmeal(optional).
  7. Let rise 1 hour.
  8. Preheat oven to 425 degrees and brush dough with melted butter.
  9. Bake for 10 min then reduce heat to 375 degrees and bake an additional 15 minutes.
  10. When finished baking, brush again with melted butter.
