French Meatball Soup

Ingredients:

  • 2 tbsp rice
  • 2 oz ground beef round
  • 1 dash garlic
  • 1 dash parsley
  • 1 dash nutmeg
  • 2 tbsp dry red wine
  • 1 1/4 cups beef broth
  • to taste salt and pepper

Directions:

  1. Add rice to 1 cup water.
  2. Boil 5 minutes; drain well.
  3. Blend rice,
  4. Ground round, egg, onion, garlic, parsley, and nutmeg; form into small meatballs.
  5. Add wine to broth; bring to boil.
  6. Drop meatballs into hot broth, one to at time. Bring to boil again; reduce heat. Simmer 20 minutes.
  7. Add salt and pepper.
  8. Microwave: Add rice to 1 c. salted water.
  9. Bring to a boil.
  10. Hold 5 minutes; drain well.
  11. Combine meatball ingredients as above. Bring wine and broth to a boil.
  12. Drop meatballs into hot broth, one at time. Bring to a boil again.
  13. Hold 10 minutes.
  14. Add salt and pepper.
