Fred's Famous Braised Beef Brisket

Ingredients:

Directions:

  1. Preheat oven to 350 Degrees.
  2. Combine salt, pepper, paprika and oregano in small bowl.
  3. Rub spice mixture over meat.
  4. Heat oil in ovenproof pot with a tight-fitting lid, over medium-high heat.
  5. Brown brisket on both sides.
  6. Transfer brisket to a platter and pour off fat from pot.
  7. Add stock, tomatoes and bay leaves to pot and scrape the brown bits off the bottom of the pot.
  8. Return brisket and juices to the pot and scatter onions and garlic over meat.
  9. Cover pot, transfer to oven and braise for 1 hour.
  10. Uncover pot and continue to braise for another hour.
  11. Push some of the onions and garlic into braising liquid surrounding brisket.
  12. Cook another 2 hours.
  13. Meat is done when the meat is extremely tender.
  14. Spoon onions, tomatoes and juices on top when serving.
