Ingredients:

Directions:

  1. Preheat oven to 400
  2. Heat oil in skillet
  3. Add onion and saute until tender
  4. Add tomatoes and chilies
  5. Cook for 2 minutes
  6. Put in mixing bowl and add spinach
  7. Mix well
  8. Stir in remaining ingredients and mix well
  9. Spray shallow baking dish with cooking spray
  10. Bake at 400 until bubbly and light brown, about 30 minutes
  11. Serve with tortilla chips
