Food Networks Orange Shallot Sauce Flounder

Ingredients:

  • 1/4 cup flour
  • 1 lb flounder
  • 1 tbsp olive oil
  • 2 tbsp shallot
  • 1/2 cup white wine
  • 2 tsp butter

Directions:

  1. Put flour in a shallor dish or plate
  2. Dredge fish in flour and set aside
  3. Chop shallot and set aside
  4. Heat oil in a large skillet
  5. And place fish in to cook over medium high heat until lightly browned about 3-4 min. per side
  6. When fish is done place on a place and cover with a tent of tinfoil
  7. In a smaller pan add 1tbsp of olive oil and sautee shallot until it starts browning
  8. Add white wine to deglaze pan scraping up any brown bits
  9. Let reduce until wine is almost gone then add mustard and orange juice
  10. Bring to a boil and then simmer
  11. Stir until sauce thickens
  12. Add butter and stir until melted and combined
  13. Top fish with sauce
