Florida Sun Beater's Chilled Cucumber-buttermilk Soup

Ingredients:

Directions:

  1. Toss in the cucumber, green chilli, ginger and lemon juice in a blender.
  2. Blend till smooth.
  3. Add buttermilk and chopped mint leaves.
  4. Season with salt and pepper.
  5. Blend again.
  6. Transfer to a serving bowl.
  7. Garnish with mint leaves.
  8. Serve chilled.
  9. Enjoy!
  10. Cooking Tip: Make sure the buttermilk is free of lumps.
  11. If you do not have buttermilk, feel free to substitute that with equal quantities of water and yogurt and whisk till smooth before using.
