  4. 1/3 cup of sugar
  5. 1/4 cup of sifted flour
  6. 1/4 teaspoon of salt
  7. 1/4 cup of milk
  8. 1/2 teaspoon of vanilla
  9. 1 egg or 2 egg yolks, beaten well
  10. Instructions
  11. Stir the quarter cup of milk into the flour and cook in the scalded milk about fifteen minutes, then stir in the egg, sugar and salt, beaten together; let cook to set the egg; let cool and add the vanilla.

  15. 1/3 cup raisins
  16. 1/4 cup brandy
  17. 2 cups cream
  18. 1/2 cup sugar
  19. Yolks 3 eggs
  20. 1/8 teaspoon salt
  21. 1 tablespoon granulated gelatine
  22. 2 tablespoons cold water
  23. Maraschino, Slow gin, Brandy}1/4 cup each
  24. 1 teaspoon vanilla
  25. Instructions
  26. Seed raisins, add brandy, and cook in double boiler until raisins are soft.
  27. Make a custard of cream, sugar, egg yolks and salt.
  28. Remove from range, add gelatine soaked in cold water.
  29. Strain, cool slightly, add flavorings, stir until mixture thickens, then add raisins.
  30. Mould and chill.
  31. Remove from mould, and garnish with Sauterne Jelly (colored violet), cut in cubes, and fresh violets.

  35. 4 bananas
  36. 2 oranges
  37. 1 tablespoon powdered vegetable gelatine
  38. 2 tablespoons lemon juice
  39. 1 teacup of sugar
  40. 1/2 pint cream
  41. Instructions
  42. Soak the gelatine in half a cup of cold water over night, and next morning dissolve it in the same quantity of boiling water.
  43. Peel the bananas, and rub them through a sieve, add the juice and pulp of the oranges, and the lemon juice and sugar.
  44. Mix all well together, and add to the gelatine.
  45. Set the mixture in a cool place, until it begins to stiffen.
  46. Whip the cream till stiff, and stir all together; put into a mold, and let it stand on ice a few hours.
