Fettuccine With Mushroom Sauce

  1. Heat oil in a large frying pan over a high heat. Add mushrooms and cook, stirring often, for 5 minutes, or until slightly softened.
  2. Add stock and bring to the boil. reduce heat to medium and simmer uncovered for 10 minutes. Meanwhile cook the pasta according t packet directions.
  3. Stir green shallots and thyme into sauce or until the shallots are tender. Remove from heat and stir in sour cream.
  4. Drain pasta and return to saucepan. Add mushroom sauce and toss gently until well combined.
