Farmers Market Greens With Baked Goat Cheese Toast...

Ingredients:

Directions:

  1. In a small bowl combine vinegar, shallot and a generous pinch of salt and let stand for 30 minutes then whisk in the olive oil and season with salt and pepper.
  2. Preheat oven to 425.
  3. Brush the baguette slices on both sides with 1 tablespoon of the olive oil.
  4. Arrange on a baking sheet and bake 8 minutes then set aside to cool.
  5. Reduce oven temperature to 350.
  6. Lightly oil a small baking dish and put the goat cheese in it then sprinkle with thyme and drizzle with remaining olive oil then bake for 10 minutes.
  7. Meanwhile in a bowl toss the salad greens with the vinaigrette.
  8. Divide the greens among individual salad plates.
  9. Spread the warm cheese on the toasts dividing evenly.
  10. Arrange 3 toasts on each plate and serve the salads immediately.
