Ingredients:

  • 2 quarts water
  • 3 cloves garlic

Directions:

  1. Wash escarole well. Put escarole in large pot, and add enough water to cover. Bring to a boil, escarole will cook down so there will be enough room to stir. Add garlic and olive oil. Let simmer for 1 hour or to taste.
