Emilie's Streusel Jam Muffins

Ingredients:

  • 1/3 cup sugar
  • 1 egg
  • 2 1/3 cups all-purpose flour
  • 1/2 tsp salt
  • 1 cup milk
  • 1 cup jam
  • 1/2 cup sugar
  • 1/2 tsp cinnamon

Directions:

  1. Cream sugar and butter together. Add egg and mix well. Set aside for now.
  2. In a separate bowl, combine flour, baking powder, and salt. Mix with creamed mixture while also adding the milk. Mix in vanilla.
  3. Use a spoon to drop in small spoonfuls of MOST of the jam into the batter. Set aside a small amount of jam, approximately 1/8 cup, for later use. Keep spooning the jam into the mixture while stirring and folding the batter gently.
  4. Grease the muffin pan. Fill 12 muffin tins 2/3 full of the muffin batter.
  5. Make Streusel: Mix all of the ingredients for the streusel together in a bowl. Make sure streusel is thoroughly mixed.
  6. Sprinkle the top of muffins with streusel mixture. Add one small dollop of jam right in the middle of each muffin top. Then sprinkle more streusel on top.
  7. Bake at 375°F for 25 to 30 minutes.
