Ingredients:

  • 3/4 cup chopped onion
  • 1 tbsp butter or 1 tbsp margarine, melted
  • 3 cups cooked rice
  • 1/2 cup raisins
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 3/4 tsp salt
  • 1/4-1/2 tsp ground cinnamon
  • 1/4 tsp pepper

Directions:

  1. In a large skillet, cook onion and celery in melted butter until crisp-tender.
  2. Add in remaining ingredients; stir to combine.
  3. Transfer mixture to a greased 2-quart casserole dish.
  4. Cover and cook at 350 degrees for 25 minutes or until heated well.
