Ingredients:

  • 1 cup cornbread crumbs of
  • 2 cloves of garlic crushed
  • 1 tbsp olive oil
  • 1/2 lb crab meat of
  • 1/4 lb shrimp
  • 1/4 lb fillets of flounder
  • 1/8 lb scallop
  • 1/4 cup mayonnaise
  • 1 tbsp lime juice
  • 2 cayenne pepper dashes of

Directions:

  1. Well in advance, prepare cornbread according to package directions.
  2. Cool and process in food processor or blender to make fine crumbs.
  3. Set aside.
  4. Finely chop Onion.
  5. Remove seeds and veins from Peppers and chop into approximately 1/2 inch pieces.
  6. Peel, chop, and finely crush garlic.
  7. Saute Onion in 10 inch frying pan in hot olive Oil until soft, about 4 minutes.
  8. Add Peppers and Garlic and continue cooking until Peppers are almost tender.
  9. Meanwhile, peel shrimp.
  10. Coarsely chop shrimp, scallops and flounder.
  11. Remove Onion/Pepper mixture from heat and add seafood, mayonnaise and lime juice.
  12. Stir gently to prevent breaking up crab.
  13. Season to taste with Salt, Pepper and cayenne.
  14. Shape into patties and coat both sides with cornbread crumbs. (May now be placed n a plate and refrigerated for up to an hour) When ready to serve, heat 2 tablespoons of the clarified Butter in the frying pan over a moderately high flame.
  15. Saute 3 cakes at a time until golden on both ides, about 2 minutes. Add more Butter as necessary
