Elderberry-mustard Vinaigrette Salad Dressing

Ingredients:

  • 1/4 cup elderberry wine vinegar
  • 1/2 cup finely minced onion
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup olive oil

Directions:

  1. In a small bowl, whisk mustard, vinegar, salt and pepper.
  2. Slowly add to oil while whisking.
  3. Stir in onion and parsley.
  4. Drizzle over salad greens, toss to coat.
