Ingredients:

  • 10 to 14 large, ripe tomatoes .
  • if you don'tsp have fresh tomatoes, the canned tomatoes are fine, since these are processed at their peak of freshness.
  • the equivalent would be three cans...
  • about 1 quart of chicken stock or broth. (if you have none homemade, the tetripaks 720 ml size will substitute well).
  • 1/2 medium- sized sweet spanish or vidalia onion. (regular cooking onions are too strong for this recipe)
  • salt & pepper to taste
  • 1 tbsp soy sauce ( i use kikkoman , personally , as i find it tastes the best!)

Directions:

  1. In a large cooking pot, add a little water, just enough to prevent the tomatoes from sticking . you'll be cooking this over mediem flame first, then finishing on low...
  2. -Dice or chop the tomatoes. Size of pieces is unimportant, since you'll be straining the soup once cooked.
  3. Chop the onion and add
  4. On medium flame, cook the tomatoes until they begin to fall apart, stirring often to prevent sticking. The onions should be soft and translucent.
  5. Using an immersion blender, puree this mixture well.
  6. Next, strain the liquid from the mixture and return to the cooking pot.
  7. Add all the remaining ingredients except the cream.
  8. Combine well, then turn the flame to low and allow to simmer until ready to serve.
  9. Slowly add the cream just prior to serving, and mix well to prevent the cream from separating or curdling.
  10. NOTE:
  11. The addition of vanilla highly improves and enhances the flavor of this soup's ingredients, without adding any vanilla taste to the finished dish.
