  • 1/2 lb carrots
  • 5 small tomatoes
  • 5 cloves garlic
  • 1 tbsp olive oil

Directions:

  1. Stir fry eggplant on a very high heat
  2. Add all other vegetables and stir on the low heat
  3. Add seasoning
