Ingredients:

  • 2 medium. eggplants
  • 2 cloves garlic crushed
  • salt and pepper to taste
  • 2 heaped tbsp mayonnaise

Directions:

  1. Cut off top of eggplants and bake on 180deg. for 1 1/2 hrs. cooking the eggplant for long takes out the bitter taste.
  2. Spoon the flesh of the eggplant into a bowl
  3. Add rest and blend
  4. Adjust seasoning to taste
  5. Store in fridge
