an easy dip that is yum with crackers and bread at any time of day. adjust seasoning to suit taste. i like things with loads of garlic.
Ingredients:
2 med. eggplants
2 cloves garlic crushed or a tablespoon granulated garlic
salt and pepper to taste
juice of 1/2 a lemon
2 heaped tablespoons mayonnaise
Directions:
1. cut off top of eggplants and bake on 180deg. for 1 1/2 hrs. cooking the eggplant for long takes out the bitter taste.
2. spoon the flesh of the eggplant into a bowl
3. add rest and blend
4. adjust seasoning to taste
5. store in fridge
