Ingredients:

  • 2 cups flour
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 cup eggnog
  • 1/4 cup water
  • 1/2-1 tsp nutmeg (if you really like lots of flavoring add the 1 tsp)
  • 1/2 cup chopped nuts or 1/2 cup raisins (optional)

Directions:

  1. Preheat oven to 400*F.
  2. Makes 12 muffins Combine flour, sugar, baking powder, salt and nutmeg in a large bowl.
  3. (mix nuts or raisins in) In a smaller bowl, combine remaining ingredients.
  4. Add liquid to dry ingredients and mix until just moistened.
  5. Pour batter in lined or greased muffin cups and bake about 15 minutes until toothpick inserted comes out clean.
