Egg-Free Chocolate Banana Loaf

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 3/4 cup banana (mashed )
  • 1/3 cup canola oil
  • 2 tsp vanilla

Directions:

  1. Preheat oven to 350°F.
  2. Coat 9x5 inch loaf pan (or 12-cup muffin tin) with cooking spray.
  3. Whisk together flour, sugar, cocoa, baking soda, and salt in a bowl.
  4. In a separate bowl, whisk together buttermilk, mashed banana, oil and vanilla.
  5. Fold buttermilk mixture into flour mixture.
  6. Scoop batter into prepared pan(s). Bake loaf 50-60 minutes (or muffins 18-22 mins).
  7. Cool 5 minutes in pan, before serving.
