Ingredients:

  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1/2 tsp sugar
  • 1/3 cup water

Directions:

  1. Put the liquid ingredients and sugar in a pot. Add the eel and bring to a boil.
  2. Add the scallions and stir in the egg. Shake gently until almost set.
