Easy Lemon Chess Pie

Ingredients:

  • 1/2 cup water
  • 1 cup sugar
  • 2 eggs
  • 3 tbsp plain flour
  • 1/4 cup butter or 1/4 cup margarine

Directions:

  1. Cut lemon in cubes and remove seeds (Do not peel!). Cut margarine in small pieces.
  2. Place all ingredients in blender and blend thoroughly (about 2 minutes).
  3. Pour into unbaked 9-inch pie shell.
  4. Bake at 325 degrees for 25 minutes.
  5. Delicious with or without whipped cream.
