Cook sausage, 5 minutes or until browned. Drain on paper towels, reserving drippings.. Set sausage aside.
Boil chicken then cut in to pieces. If using whole chicken, debone it, save chicken stock
In a fry pan, add oil and flour to make a roux, and cook over medium heat, stirring constantly, 20 to 25 minutes, or until roux is chocolate colored. Do not burn, if u burn the roux, even a little, start over.
In the chicken pot, stir in onion, green onions (scallions) bell pepper, and celery; cook, stirring often, 8 minutes or until tender. Gradually add 2 quarts hot water, and bring mixture to a boil; add chicken, garlic, and all other ingredients except chicken and sausage. Reduce heat to low, and simmer, stirring occasionally, 1 hour.
Add sausage to gumbo and chicken; cook 30 minutes,. Remove and discard bay leaves
Add okra, simmer 10 mins.
Remove gumbo from heat. Sprinkle with filé powder, if desired. Serve with white rice.
