Easy Chicken And Sausage Gumbo

Ingredients:
easy chicken and sausage gumbo
1 pound andouille sausage or smoked, cut into 1/4-inch-thick slices
4 skinned bone-in chicken breasts or 1 whole chicken
3/4 c vegetable oil
3/4 cup all-purpose flour
1 medium onion, chopped
1/2 green bell pepper, chopped
2 celery stalked, sliced
2 quarts hot water
3 garlic cloves, minced
2 bay leaves
1 tablespoon worcestershire sauce
2 teaspoons creole seasoning
1/2 teaspoon dried thyme
1/2 to 1 teaspoon hot sauce
4 green onions(scallions), sliced
filé powder (optional)
small bag of frozen okra
Directions:
1. Cook sausage, 5 minutes or until browned. Drain on paper towels, reserving drippings.. Set sausage aside.
2. Boil chicken then cut in to pieces. If using whole chicken, debone it, save chicken stock
3. In a fry pan, add oil and flour to make a roux, and cook over medium heat, stirring constantly, 20 to 25 minutes, or until roux is chocolate colored. Do not burn, if u burn the roux, even a little, start over.
4. In the chicken pot, stir in onion, green onions (scallions) bell pepper, and celery; cook, stirring often, 8 minutes or until tender. Gradually add 2 quarts hot water, and bring mixture to a boil; add chicken, garlic, and all other ingredients except chicken and sausage. Reduce heat to low, and simmer, stirring occasionally, 1 hour.
5. Add sausage to gumbo and chicken; cook 30 minutes,. Remove and discard bay leaves
6. Add okra, simmer 10 mins.
7. Remove gumbo from heat. Sprinkle with filé powder, if desired. Serve with white rice.
