Easy Apricot Bars

Ingredients:

  • 1 cup butter
  • 1 cup sugar
  • 2 cups flour
  • 1 (10 oz) jar apricot jam

Directions:

  1. Cream room temperature butter with sugar until fluffy.
  2. Blend in the one egg yolk.
  3. Mix in 2 cups of flour , and the nuts .
  4. Divide dough in two parts.
  5. Spread or press 1 part in a greased 9 x 13 pan.
  6. Cover with the apricot jam.
  7. Drop remaining dough in spoonfuls over the jam, spreading to edges carefully.
  8. Bake in a 350F oven about 40 minutes or until golden.
  9. Cool and cut into squares.
