Early  Morning Coffee Cake

Ingredients:

  • 3/4 cup boiling water
  • 1/4 cup oil
  • 1 tsp vanilla
  • 1 (3 1/2 oz) box vanilla pudding mix
  • 4 eggs
  • 1 cup sour cream
  • 1 tbsp butter
  • 1/2 cup sugar
  • 2 tsp cinnamon
  • 1/2 cup chopped walnuts (optional)

Directions:

  1. Mix all ingredients together.
  2. Poor half of cake mixture in a greased 9x13 baking pan, then sprinkle half of topping.
  3. Add rest of cake mixture and topping.
  4. Bake at 350 degrees for 35-40 minutes or until done.
