Earl's Mexican Chicken

  1. Steam Chicken for 20 minutes let cool and dice
  2. Cook Rice as normal
  3. Mix together all ingredients except corn flakes and cheese
  4. Bake in casserole dish uncovered for 1 hour
  5. Top with corn flakes and cheese and bake another 20 min or until cheese is melted
  6. Serve with a side dish of spinach or broccoli
