Ingredients:

Directions:

  1. In a 6-quart Dutch oven or baking dish:
  2. Heat oil.
  3. Sauté: onion, tomatoes,salt, curry powder, and red pepper until soft.
  4. Add duckling pieces.
  5. Sauté the duckling lightly for 2 or 3 minutes.
  6. Add 2 quarts water. Cover and simmer for 30 minutes or bake at 350' until duckling is tender.
  7. Slightly green bananas or plantains may be simmered with the duckling.
  8. Or they may be prepared separately and served as a side vegetable.
