Dry Rub for Leg of Lamb

Ingredients:

  • 1 cup espresso
  • 1 tbsp cinnamon
  • 1 tbsp sugar
  • 1 tbsp salt
  • 1 tbsp black pepper

Directions:

  1. Preheat oven to 400 degrees F.
  2. Mix all ingredients in a bowl.
  3. Generously coat the lamb.
  4. Allow the rub to sit on the lamb for an hour.
  5. Do not be concerned with the moisture developing on the lamb.
  6. Place the lamb in the preheated oven, and cook to desired temperature.
