Dr. Ruth's almost as good as Sex Cheesecake

Ingredients:

  • 3 tbsp sugar
  • 1/2 cup sugar
  • 1/2 tsp vanilla
  • 1 pinch salt
  • 2 large eggs
  • 3 tbsp chambord raspberry liquor
  • 1 tbsp sugar
  • 1/2 tsp vanilla
  • 1 tbsp chambord raspberry liquor

Directions:

  1. Preheat oven to 350 Degrees F.
  2. To prepare crust, mix graham cracker crumbs, sugar and butter.
  3. Press mixture firmly into bottom of 9 springform or cheesecake pan.
  4. To make filling, mix cream cheese, sugar, vanilla, and salt at medium speed with electric mixer.
  5. Add eggs, and mix until well blended.
  6. Using a fork, gently fold Chambord into batter.
  7. Pour mixture into crust.
  8. Bake for approximately 40 minutes or until golden brown.
  9. Let cool and remove from pan.
  10. To prepare topping, mix sour cream, sugar, vanilla, and Chambord and spread evenly over cheesecake.
  11. Refrigerate for 4 hours or until firm.
  12. Top with fresh raspberries just before serving.
