Diabetic Orange Nut Cake

Ingredients:

  • 1/3 cup margarine
  • 1/3 cup splenda granular
  • 1 egg
  • 1 1/4 cups whole wheat flour
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • 2/3 cup orange juice
  • 2 tbsp chopped nuts

Directions:

  1. Pre-heat oven to 350 degrees.
  2. Grease 8-inch square baking pan.
  3. In large mixing bowl, combine margarine, Splenda's and egg. Beat 2 minutes at high speed, sraping the bowl occasionally. Blend in flour and mix well.
  4. Blend in remaining ingredients, except nuts. Beat 1 minute on slow speed.
  5. Pour mix into prepared pan. Sprinkle with nuts. Bake at 350 degrees 25 to 30 minutes.
